Ingredients
- 1 pound large shrimp, peeled and deveined
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1/3 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 1/2 teaspoon crushed red pepper flakes (optional, for a bit of heat)
- Salt and freshly ground black pepper, to taste
- 2 tablespoons fresh parsley, chopped
- 1 lemon, cut into wedges
Feel free to substitute the Parmesan with pecorino if you prefer a sharper cheese, and adjust the spice level to your liking with more or less red pepper flakes. This recipe is all about making it your own!
Instructions
- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
- In a large bowl, combine the olive oil, minced garlic, Parmesan cheese, Italian seasoning, and red pepper flakes. Stir until well mixed.
- Add the shrimp to the bowl and toss until they are evenly coated with the garlic Parmesan mixture.
- Spread the shrimp in a single layer on the prepared baking sheet. Season with salt and pepper to taste.
- Roast in the preheated oven for about 8-10 minutes or until the shrimp are pink and opaque.
- Remove from the oven and sprinkle with fresh parsley. Serve with lemon wedges on the side.
From my experience, keeping an eye on the shrimp as they roast is key. They cook quickly, and you want them perfectly tender, not overdone. Remember, cooking is about engaging all your senses, just like my abuela taught me!
