Ingredients
1 pound ground pork (or substitute with ground chicken or turkey)
2 cups shredded cabbage
1 cup shredded carrots
1/2 cup chopped scallions
2 cloves garlic, minced
1 tablespoon soy sauce
1 tablespoon sesame oil
1 teaspoon ground ginger
1/2 teaspoon salt
1/4 teaspoon black pepper
20 egg roll wrappers
Vegetable oil, for frying
Instructions
In a large skillet over medium heat, cook the ground pork until fully browned, about 5-7 minutes. Drain any excess fat.
Add the cabbage, carrots, and scallions to the skillet. Stir in the garlic, soy sauce, sesame oil, ground ginger, salt, and pepper. Cook for another 5 minutes until the vegetables are tender.
Remove the skillet from the heat and let the filling cool slightly.
On a clean surface, lay out an egg roll wrapper with one corner pointing towards you. Place 2 tablespoons of the filling near the corner.
Fold the corner over the filling, then fold in the sides and roll tightly. Seal the edge with a dab of water. Repeat with remaining wrappers and filling.
In a deep pan, heat vegetable oil to 350°F. Fry the egg rolls in batches for 3-4 minutes each, until they are golden brown and crisp.
Transfer the egg rolls to a paper towel-lined plate to drain excess oil.
