Learn how to make delicious Gooey Butter Pecan Cake. Easy recipe with step-by-step instructions.

  • Total Time: 45 minutes
  • Yield: 4 servings

Ingredients

  • 1 box of yellow cake mix
  • 1/2 cup unsalted butter, melted
  • 4 large eggs
  • 1 package (8 ounces) cream cheese, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup chopped pecans
  • 1/4 cup granulated sugar (optional for topping)

For a twist, you can substitute walnuts for pecans or add a sprinkle of cinnamon for an extra layer of flavor. Remember, cooking is all about experimenting and making the recipe your own, just like my abuela taught me.

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or cooking spray.
  2. In a large bowl, combine the yellow cake mix, melted butter, and 2 of the eggs. Mix well until the ingredients are fully incorporated and a dough forms.
  3. Press the dough evenly into the bottom of your prepared baking dish to form the crust.
  4. In another bowl, beat the cream cheese until smooth. Add the remaining 2 eggs, powdered sugar, and vanilla extract. Continue to mix until creamy and well blended.
  5. Pour the cream cheese mixture over the crust, spreading it evenly with a spatula.
  6. Sprinkle the chopped pecans over the top of the cream cheese layer. If you like a sweeter cake, sprinkle the optional granulated sugar over the pecans for added crunch.
  7. Bake in the preheated oven for 35-40 minutes, or until the edges are golden brown and the center is set but still slightly gooey.
  8. Allow the cake to cool in the pan for at least 30 minutes before slicing and serving. This will help the layers set and make it easier to cut.

As you prepare this cake, remember that cooking is an art, not a science. Don’t stress over perfection—embrace the process and enjoy the journey.
