Creating these gyros is a simple process, perfect for a weeknight dinner or a weekend gathering. Here’s how you can bring a taste of Greece to your home:

  1. In a large bowl, whisk together the lemon juice, olive oil, minced garlic, oregano, thyme, cumin, smoked paprika, salt, and pepper.
  2. Add the chicken thighs, ensuring they are well coated in the marinade. Cover and refrigerate for at least 1 hour, preferably overnight for deeper flavor.
  3. While the chicken marinates, prepare the tzatziki sauce. Combine Greek yogurt, grated cucumber, dill, garlic, olive oil, lemon juice, and salt in a bowl. Mix well and refrigerate until ready to serve.
