- 1 pound ground beef
- 2 medium zucchinis, diced
- 1 cup basmati rice
- 2 cups beef broth
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon ground cumin
- Salt and pepper to taste
- 1/4 cup crumbled feta cheese
- 1 tablespoon fresh parsley, chopped
- Lemon wedges for serving
If you’re out of basmati rice, jasmine or long-grain rice works just as well. And if you’re feeling adventurous, you can substitute ground turkey or chicken for a leaner option.
Instructions
Let’s get cooking! Follow these steps to bring a taste of Greece to your kitchen.
- Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
- Add the garlic and cook for another 1 minute until fragrant.
- Increase the heat to medium-high and add the ground beef. Cook, breaking it up with a spoon, until browned and cooked through, about 7-8 minutes.
- Stir in the diced zucchini, oregano, cumin, salt, and pepper. Cook for an additional 5 minutes until the zucchini has softened.
- Meanwhile, rinse the basmati rice under cold water until the water runs clear. In a separate pot, bring the beef broth to a boil, add the rice, cover, and reduce the heat to a simmer. Cook until the rice is tender and the liquid is absorbed, about 15 minutes.
- Once the rice is cooked, fluff it with a fork and serve in bowls. Top with the beef and zucchini mixture.
- Sprinkle with crumbled feta cheese and fresh parsley. Serve with lemon wedges on the side.
