Learn how to make delicious Greek-Style Beef And Zucchini Rice Bowl. Easy recipe with step-by-step instructions.

  • Total Time: 45 minutes
  • Yield: 4 servings

Ingredients

Gather these ingredients and you’ll be well on your way to creating a meal that’s sure to become a family favorite. I promise it won’t take more time than a good chat with an old friend!

  • 1 pound ground beef
  • 2 medium zucchinis, diced
  • 1 cup basmati rice
  • 2 cups beef broth
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste
  • 1/4 cup crumbled feta cheese
  • 1 tablespoon fresh parsley, chopped
  • Lemon wedges for serving

If you’re out of basmati rice, jasmine or long-grain rice works just as well. And if you’re feeling adventurous, you can substitute ground turkey or chicken for a leaner option.

Instructions

Let’s get cooking! Follow these steps to bring a taste of Greece to your kitchen.

  1. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
  2. Add the garlic and cook for another 1 minute until fragrant.
  3. Increase the heat to medium-high and add the ground beef. Cook, breaking it up with a spoon, until browned and cooked through, about 7-8 minutes.
  4. Stir in the diced zucchini, oregano, cumin, salt, and pepper. Cook for an additional 5 minutes until the zucchini has softened.
  5. Meanwhile, rinse the basmati rice under cold water until the water runs clear. In a separate pot, bring the beef broth to a boil, add the rice, cover, and reduce the heat to a simmer. Cook until the rice is tender and the liquid is absorbed, about 15 minutes.
  6. Once the rice is cooked, fluff it with a fork and serve in bowls. Top with the beef and zucchini mixture.
  7. Sprinkle with crumbled feta cheese and fresh parsley. Serve with lemon wedges on the side.

As you cook, remember my abuela’s advice: taste as you go and adjust the seasonings to your liking. Cooking is all about feeling confident in your choices!
