Total Time:45 minutes
Yield:4 servings
Ingredients
1 pound ground turkey
1/2 cup breadcrumbs
1/4 cup chopped fresh parsley
1/4 cup chopped fresh mint
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon black pepper
1 large egg
2 tablespoons olive oil
1/2 cup crumbled feta cheese
1/2 cup Greek yogurt
1 tablespoon lemon juice
1 tablespoon olive oil
Salt and pepper to taste
Instructions
Preheat your oven to 400°F. Line a baking sheet with parchment paper for easy cleanup.
In a large bowl, combine the ground turkey, breadcrumbs, parsley, mint, garlic, oregano, cumin, salt, pepper, and egg. Mix until just combined — don’t overwork the meat, as it can become tough.
Using a tablespoon or small ice cream scoop, form the mixture into meatballs about 1 1/2 inches in diameter and place them on the prepared baking sheet.
Drizzle the meatballs with olive oil and bake for 18-20 minutes, or until they are golden brown and cooked through. An internal temperature of 165°F indicates they are done.
While the meatballs are baking, prepare the feta sauce by blending the feta cheese, Greek yogurt, lemon juice, and olive oil in a food processor until smooth. Season with salt and pepper to taste.
Once the meatballs are done, let them cool for a few minutes, then serve warm with the feta sauce drizzled over the top or on the side for dipping.
