Ingredients
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 cups shredded sharp cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 2 cans (4 ounces each) diced green chiles, drained
- 4 large eggs
- 1 cup milk
- 1/4 teaspoon black pepper
Feel free to substitute the cheddar or Monterey Jack with your favorite cheeses. If you’re looking for a bit more heat, you can add a pinch of cayenne pepper or use hot green chiles.
Instructions
- Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish to prevent sticking.
- In a medium-sized bowl, combine the flour, baking powder, and salt. Whisk together until well blended.
- In a separate large bowl, mix the shredded cheddar and Monterey Jack cheeses with the drained green chiles.
- Add the flour mixture to the cheese mixture and toss until the cheese is thoroughly coated with flour.
- In another bowl, whisk the eggs, milk, and black pepper until smooth. Pour this mixture over the cheese and flour mixture, stirring until just combined.
- Pour the batter into the prepared baking dish, spreading it evenly with a spatula.
- Bake for 35-40 minutes, or until the top is golden brown and a knife inserted in the center comes out clean.
- Let it cool for at least 10 minutes before slicing into squares. Enjoy the cheesy, spicy goodness!
