Learn how to make delicious Grilled Chicken & Broccoli Bowls with Creamy Garlic Sauce. Easy recipe with step-by-step instructions.
Total Time:45 minutes
Yield:4 servings
Ingredients
2 boneless, skinless chicken breasts
3 cups broccoli florets
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon smoked paprika
1/2 teaspoon cumin
1 cup cooked brown rice
1/4 cup Greek yogurt
2 tablespoons mayonnaise
3 cloves garlic, minced
1 tablespoon lemon juice
1 tablespoon chopped fresh parsley (optional, for garnish)
Instructions
Preheat your grill to medium-high heat. If you don’t have a grill, a stovetop grill pan works just as well.
In a small bowl, mix together olive oil, salt, pepper, smoked paprika, and cumin. Rub this mixture over the chicken breasts, coating them evenly.
Place the chicken on the grill and cook for 6-7 minutes on each side, or until the internal temperature reaches 165°F. Once done, remove from heat and let rest for a few minutes before slicing.
While the chicken is grilling, toss broccoli florets with a pinch of salt and a splash of olive oil. Grill them for about 5-6 minutes or until they are tender and slightly charred. This reminds me of summer evenings spent barbecuing with my family, where the smoky aroma filled the air.
In a separate bowl, combine Greek yogurt, mayonnaise, minced garlic, and lemon juice. Stir until smooth and creamy. This sauce has the kind of rich, garlicky flavor that my abuela would have loved.
To assemble the bowls, start with a base of cooked brown rice. Arrange the grilled chicken slices and broccoli on top.
Drizzle generously with the creamy garlic sauce, and if you’re feeling fancy, sprinkle with fresh parsley for a pop of color.
