  • 1 tablespoon vegetable oil
  • 1 teaspoon black pepper
  • 1 lime, juiced
  • Optional: 2 tablespoons chopped cilantro for garnish

Instructions

  1. Begin by preparing the marinade. In a large bowl, combine the lemongrass, garlic, soy sauce, fish sauce, brown sugar, vegetable oil, black pepper, and lime juice. Stir until the sugar is dissolved and the ingredients are well mixed.
  2. Add the chicken thighs to the marinade, ensuring each piece is well coated. Cover the bowl and let the chicken marinate in the refrigerator for at least 1 hour, or preferably overnight to enhance the flavors.
  3. Preheat your grill to medium-high heat. If you’re using a charcoal grill, allow the coals to heat until they are covered with white ash.
  4. Place the marinated chicken thighs on the grill. Cook for about 5-7 minutes on each side, or until the chicken reaches an internal temperature of 165°F and has a nice char on the outside.
  5. Once cooked, remove the chicken from the grill and let it rest for a few minutes. This helps the juices redistribute, keeping the chicken moist and flavorful.
