Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups cooked brown rice
  • 1 avocado, diced
  • 1 cup fresh corn kernels (or frozen, thawed)
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced
  • 1 jalapeño, seeded and diced (optional)

Instructions

  1. Start by marinating the shrimp. In a medium bowl, combine olive oil, smoked paprika, garlic powder, salt, and black pepper. Add the shrimp and toss until they’re evenly coated. Let them marinate for at least 15 minutes while you prepare the rest of the ingredients.
  2. While the shrimp is marinating, prepare the avocado corn salsa. In a large bowl, combine diced avocado, corn kernels, red onion, cilantro, lime juice, and jalapeño. Toss gently to combine and set aside.
  3. Heat a grill or grill pan over medium-high heat. Once hot, grill the shrimp for about 2-3 minutes on each side, or until they’re pink and opaque. Be careful not to overcook them, as they can become rubbery.
  4. To assemble the bowls, start by dividing the cooked brown rice among four bowls. Top with grilled shrimp and a generous scoop of avocado corn salsa.
