Ingredients

  • 2 tablespoons olive oil
  • 1/4 cup chicken broth (optional for added moisture)
  • Fresh parsley, chopped, for garnish

If you’re missing a few ingredients, don’t worry! You can substitute ground turkey with ground chicken or beef, and if you’re out of smoked paprika, regular paprika with a dash of cayenne can add a similar warmth. This flexibility is reminiscent of my grandmother’s cooking style — adapting and creating with what we had on hand.

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the chopped onion and cook until translucent, about 3-4 minutes.
  2. Add the minced garlic and sauté for another minute until fragrant. Cooking the garlic just right reminds me of the countless times my grandmother reminded me to watch and smell for that perfect aroma.
  3. Increase the heat to medium-high and add the ground turkey. Cook until browned and cooked through, breaking it up with a spatula as it cooks, about 6-8 minutes.
  4. Stir in the diced potatoes, smoked paprika, cumin, salt, and pepper. Mix well to ensure the potatoes are coated with the spices.
  5. Add the chicken broth if using, and cover the skillet. Reduce the heat to medium-low and let it simmer for 15-20 minutes, or until the potatoes are tender, stirring occasionally. This step is critical for infusing the flavors deeply into the potatoes, much like how we would let the flavors meld in our family’s hearty stews.
  6. Once the potatoes are cooked through, remove the lid and increase the heat to medium-high to let any excess liquid evaporate, about 2-3 minutes.
