Ingredients

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 4 medium potatoes, peeled and thinly sliced
  • 2 cups shredded cheddar cheese
  • 1 can (10.5 ounces) cream of mushroom soup
  • 1/2 cup milk
  • 2 tablespoons olive oil
  • Optional: fresh parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with some olive oil.
  2. In a large skillet over medium heat, add the ground beef and cook until browned, breaking it apart with a wooden spoon. This is one of those moments where I remember my abuela’s patience as she taught me to let the meat develop a rich color without rushing.
  3. Add the chopped onion and minced garlic to the skillet. Season with salt, black pepper, and paprika, and cook until the onions are translucent and the garlic is fragrant.
  4. Layer half of the sliced potatoes on the bottom of the prepared baking dish. Top with half of the beef mixture, followed by a cup of shredded cheddar cheese.
  5. Repeat the layers with the remaining potatoes and beef, finishing with the rest of the cheese.
  6. In a small bowl, mix the cream of mushroom soup with the milk until smooth. Pour this mixture evenly over the casserole.
  7. Cover the dish with aluminum foil and bake in the preheated oven for 45 minutes. Then, remove the foil and bake for an additional 15 minutes, or until the potatoes are tender and the cheese is bubbly and golden.
  8. Let the casserole cool for a few minutes before serving. Garnish with fresh parsley if desired.
