2 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsalted butter, softened
1/4 cup butterscotch pudding mix (instant)
1/2 cup granulated sugar
1/2 cup packed brown sugar
1 teaspoon vanilla extract
2 large eggs
1 cup butterscotch chips
1/2 cup white chocolate chips
Instructions
Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper. Growing up, my grandmother always insisted on having everything ready before we began, and it’s a habit I’ve kept.
In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
In a large bowl, cream together the softened butter, butterscotch pudding mix, granulated sugar, and brown sugar until the mixture is light and fluffy, about 3-4 minutes. I find this step therapeutic, reminiscent of the times I spent with my abuela in the kitchen.
Add the vanilla extract and eggs to the butter mixture, beating well after each addition.
