Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon active dry yeast
  • 1 teaspoon sugar
  • 3/4 cup warm water (about 110°F)
  • 1 tablespoon olive oil, plus more for drizzling
  • 1/2 teaspoon salt
  • 1 cup tomato sauce (preferably homemade or high-quality store-bought)
  • 8 ounces fresh mozzarella cheese, sliced
  • 1/4 cup fresh basil leaves
  • Salt and pepper to taste

Feel free to substitute whole wheat flour for a nuttier flavor or add a sprinkle of red pepper flakes for a little heat. Just like in my childhood kitchen, the possibilities are endless when you cook with heart!

Instructions

  1. In a small bowl, combine the yeast, sugar, and warm water. Let it sit for about 5 minutes, or until it becomes frothy.
  2. In a large bowl, mix the flour and salt. Make a well in the center and add the yeast mixture and olive oil. Stir until a dough forms.
  3. Transfer the dough to a floured surface and knead for about 8-10 minutes, until smooth and elastic. My abuela always said this is where the love goes in, so don’t rush it!
  4. Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until it doubles in size.
  5. Preheat your oven to 475°F (245°C) and place a pizza stone or a baking sheet in the oven to heat.
  6. Punch down the dough and roll it out on a floured surface to your desired thickness. Transfer it to a piece of parchment paper.
  7. Spread the tomato sauce evenly over the base, leaving a small border around the edges.
  8. Top with slices of mozzarella cheese and season with salt and pepper.
  9. Carefully transfer the pizza (on the parchment paper) onto the hot pizza stone or baking sheet.
  10. Bake for about 10-12 minutes, or until the crust is golden and the cheese is bubbling.
  11. Remove from the oven, add fresh basil leaves, and drizzle with a little olive oil before serving.
