Learn how to make delicious Homemade Pumpkin Spice Twinkies. Easy recipe with step-by-step instructions.
Total Time:45 minutes
Yield:4 servings
Ingredients
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
3/4 cup granulated sugar
1/4 cup unsalted butter, softened
2 large eggs
1 teaspoon vanilla extract
1/2 cup pumpkin puree
1/2 cup heavy cream
1/2 cup powdered sugar
1/4 teaspoon pumpkin spice
1/2 teaspoon vanilla extract
Instructions
Preheat your oven to 350°F. Grease a twinkie pan or a muffin pan if that’s what you have at hand.
In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves. These spices are what bring the twinkies to life, just like how my abuela would bring our kitchen to life with her aromatic dishes.
In a separate large bowl, cream the granulated sugar and butter until light and fluffy, about 3 minutes.
Add the eggs one at a time, beating well after each addition, followed by the vanilla extract and pumpkin puree. The mixture should be smooth and creamy, reminiscent of the pumpkin pies we’d have during family gatherings.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix, as you want your cakes to be tender and delicate.
Fill each cavity of the pan about 2/3 full with the batter. Bake for 12-15 minutes or until a toothpick inserted into the center comes out clean. Let them cool in the pan for a few minutes before transferring to a wire rack to cool completely.
For the filling, whip the heavy cream, powdered sugar, pumpkin spice, and vanilla extract until stiff peaks form. This creamy blend is reminiscent of the sweet treats my siblings and I would sneak from the kitchen when no one was looking.
Once the cakes are completely cool, use a piping bag with a long tip to fill each twinkie with the cream mixture.
