Ingredients
Gathering your ingredients is the first step to creating a dish that’s both simple and satisfying. Here’s what you’ll need:
- 2 pounds of small red potatoes, quartered
- 6 slices of thick-cut bacon, chopped
- 3 tablespoons of honey
- 2 tablespoons of olive oil
- 1 teaspoon of garlic powder
- 1 teaspoon of smoked paprika
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
If you’re out of olive oil, you can substitute it with melted butter for an even richer flavor. And if smoked paprika isn’t available, regular paprika works just fine!
Instructions
Let’s get cooking! Follow these steps to bring the flavors of my family kitchen into yours:
- Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- In a large bowl, toss the quartered potatoes with olive oil, garlic powder, smoked paprika, salt, and pepper until evenly coated.
- Spread the potatoes in a single layer on the prepared baking sheet, ensuring they have plenty of room to roast and crisp up.
- Sprinkle the chopped bacon over the potatoes, making sure it’s evenly distributed for maximum flavor.
- Drizzle the honey over the potatoes and bacon, then gently toss them to ensure everything is well coated.
- Roast in the preheated oven for 35-40 minutes, turning the potatoes halfway through, until they are golden brown and tender.
- Once cooked, remove from the oven and let them cool for a few minutes. Garnish with freshly chopped parsley before serving.
