Ingredients
1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
1/4 cup honey
3 tablespoons soy sauce
2 tablespoons apple cider vinegar
3 cloves garlic, minced
1 tablespoon olive oil
1/4 teaspoon red pepper flakes (optional, for a bit of heat)
2 cups cooked jasmine rice
1 cup steamed broccoli florets
Sesame seeds for garnish (optional)
Sliced green onions for garnish (optional)
Instructions
In a small bowl, whisk together honey, soy sauce, apple cider vinegar, and minced garlic. Set aside.
Heat olive oil in a large skillet over medium-high heat. Add the chicken pieces and cook until golden brown, about 5-7 minutes.
Pour the honey-garlic sauce over the chicken. Add red pepper flakes if using. Stir to coat the chicken evenly.
Reduce heat to medium and let the sauce simmer until it thickens slightly and the chicken is cooked through, about 5 more minutes.
While the chicken cooks, prepare your jasmine rice according to package instructions if you haven’t already.
Once the chicken is done, remove the skillet from heat.
To assemble the bowls: place a generous scoop of rice in each bowl, top with a portion of the honey garlic chicken, and add steamed broccoli on the side.
Garnish with sesame seeds and sliced green onions, if desired.
