Ingredients
- 4 boneless, skinless chicken breasts
- 1/4 cup honey
- 1 tablespoon chili flakes (adjust to taste)
- 1/2 cup crumbled feta cheese
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 1 tablespoon lemon juice
- Fresh parsley for garnish
If you’re like me and enjoy experimenting, you can substitute the chili flakes with sriracha for a different type of heat. For a creamier texture, consider swapping some of the feta with goat cheese.
Instructions
- Preheat your oven to 375°F (190°C). Line a baking dish with parchment paper or lightly grease it with olive oil.
- In a small bowl, mix together the honey, chili flakes, olive oil, garlic powder, smoked paprika, lemon juice, salt, and pepper.
- Place the chicken breasts in the prepared baking dish. Pour the honey mixture over the chicken, ensuring each piece is well-coated.
- Bake in the preheated oven for 20 minutes. Remove the dish, sprinkle the crumbled feta over the chicken, and return to the oven for an additional 10-15 minutes, or until the chicken is fully cooked and the feta is slightly melted.
- Once done, let the chicken rest for a few minutes. Sprinkle with fresh parsley before serving.
Pro tip: Use a meat thermometer to ensure your chicken reaches 165°F (75°C) for safe consumption. This little tool saved me many times when I first started cooking.
