Ingredients

  • 4 salmon fillets (about 6 ounces each)
  • 1/4 cup honey
  • 2 tablespoons hot sauce (adjust to taste)
  • 1 tablespoon soy sauce
  • 2 cloves garlic, minced
  • 3 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 pound asparagus, trimmed
  • 1 red bell pepper, sliced
  • Salt and pepper to taste
  • Lemon wedges for serving

Feel free to substitute the asparagus with your favorite seasonal veggies or whatever you have on hand. Broccoli or green beans would work beautifully here.

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a small bowl, mix together the honey, hot sauce, soy sauce, and half of the minced garlic. Set aside.
  3. Place the salmon fillets on the prepared baking sheet, skin side down. Brush the hot honey mixture generously over each fillet.
  4. In a large skillet, heat the olive oil and 1 tablespoon of butter over medium heat. Add the remaining garlic and cook until fragrant, about 1 minute.
  5. Add the asparagus and red bell pepper to the skillet. Season with salt and pepper, and sauté until the veggies are tender-crisp, about 5-7 minutes.
  6. Once the veggies are cooked, transfer them to the baking sheet around the salmon fillets.
  7. Dot the remaining butter over the veggies and salmon. Bake in the preheated oven for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
  8. Serve the salmon and veggies with lemon wedges on the side for a fresh burst of flavor.
