12 ounces of penne pasta
2 tablespoons olive oil
1 small onion, finely chopped
3 cloves garlic, minced
1 can (14 ounces) crushed tomatoes
1 cup heavy cream (you can substitute with coconut milk for a lighter option)
1 cup chicken or vegetable broth
1 teaspoon dried oregano
1/2 teaspoon red pepper flakes (optional, for a little kick)
Salt and pepper to taste
1/2 cup grated Parmesan cheese
Fresh basil leaves for garnish
Instructions
Set your Instant Pot to sauté mode and add the olive oil. Once hot, add the chopped onion and sauté until translucent, about 3-4 minutes.
Add the minced garlic and sauté for another 30 seconds until fragrant.
Turn off the sauté mode. Stir in the crushed tomatoes, heavy cream, chicken or vegetable broth, dried oregano, and red pepper flakes. Season with salt and pepper to taste.
Add the penne pasta, ensuring it is submerged in the liquid. Do not stir.
