Ingredients

  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (optional, for a bit of heat)
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 cup plain Greek yogurt
  • 1 lemon, juiced
  • 1 tablespoon tahini
  • 1 tablespoon honey

Instructions

  1. In a large mixing bowl, combine the ground chicken, chopped onion, minced garlic, ground cumin, ground coriander, smoked paprika, cayenne pepper, parsley, cilantro, salt, and pepper. Mix until all ingredients are well combined. This step takes me back to helping my abuela mix ingredients for her famous albondigas — it’s all about getting your hands in there and feeling the texture!
  2. Divide the mixture into equal portions and shape them into oval patties or logs. This is a great step to involve kids, making it a fun family activity.
  3. Heat the olive oil in a large skillet over medium heat. Add the chicken koftas and cook until browned on all sides and cooked through, about 8-10 minutes. I often think of the sizzling sounds in my grandmother’s kitchen when I hear the koftas hitting the hot pan.
  4. While the koftas are cooking, prepare the garlic yogurt sauce by whisking together the Greek yogurt, lemon juice, tahini, honey, and a pinch of salt in a small bowl. Adjust the seasoning to taste.
  5. Once the koftas are done, serve them warm with a generous drizzle of the creamy garlic yogurt sauce on top.
