  • 1 can (14 ounces) coconut milk
  • 1 lime, juiced and zested
  • Salt and pepper, to taste
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Start by seasoning the chicken breasts with salt and pepper on both sides.
  2. In a large skillet, heat the olive oil over medium heat. Add the chicken and cook for about 5-7 minutes on each side, or until golden brown and cooked through. Remove from the skillet and set aside.
  3. In the same skillet, add the chopped onion and sauté for about 3 minutes until translucent. Add the garlic, cumin, paprika, and cayenne pepper, and cook for an additional 2 minutes until fragrant.
  4. Pour in the coconut milk and stir to combine, scraping any brown bits from the bottom of the skillet to enhance the flavor.
  5. Return the chicken to the skillet, reduce the heat to low, and let it simmer in the sauce for about 10 minutes, allowing the flavors to meld together beautifully.
  6. Before serving, stir in the lime juice and zest. Taste and adjust the seasoning if necessary.
