3 pounds beef brisket
2 tablespoons olive oil
1 large onion, thinly sliced
4 cloves garlic, minced
1 cup beef broth
1/2 cup brown sugar
1/4 cup soy sauce
1/4 cup balsamic vinegar
2 tablespoons Worcestershire sauce
1 tablespoon Dijon mustard
1 tablespoon tomato paste
Salt and pepper to taste
1 teaspoon smoked paprika

Instructions
Preheat your oven to 325°F. While that’s heating up, season the beef brisket generously with salt, pepper, and smoked paprika.
In a large oven-safe pot or Dutch oven, heat the olive oil over medium-high heat. Sear the brisket on all sides until browned, about 4-5 minutes per side. Remove the brisket and set aside.
In the same pot, add the sliced onions and cook until they begin to caramelize, about 8-10 minutes. Stir in the garlic and cook for an additional minute.
Deglaze the pot with beef broth, scraping up any browned bits from the bottom. This step captures all those delicious flavors developed during searing.
Add brown sugar, soy sauce, balsamic vinegar, Worcestershire sauce, Dijon mustard, and tomato paste to the pot, stirring to combine.
Return the brisket to the pot, ensuring it’s well-coated in the sauce. Cover the pot with a lid and transfer it to the preheated oven.
Bake for 3-4 hours, or until the brisket is fork-tender and easily pulls apart. Check occasionally, basting with the sauce to keep it moist.
