Ingredients

  • 3-pound beef chuck roast
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, peeled and sliced
  • 2 celery stalks, chopped
  • 1 cup red wine (or beef broth for a non-alcoholic version)
  • 2 cups beef broth
  • 1 can (14 ounces) diced tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Instructions

  1. Preheat your oven to 300°F. Season the beef chuck roast generously with salt and pepper.
  2. In a large Dutch oven, heat olive oil over medium-high heat. Sear the roast on all sides until browned, about 4-5 minutes per side. Remove and set aside.
  3. In the same pot, add chopped onions, garlic, carrots, and celery. Sauté until the onions are translucent and the vegetables are softened, approximately 5-7 minutes.
  4. Pour in the red wine (or beef broth) to deglaze the pot, scraping up any browned bits from the bottom. Let it simmer for 2 minutes.
  5. Add the beef broth, diced tomatoes, tomato paste, oregano, and thyme to the pot. Stir to combine.
  6. Return the roast to the pot, ensuring it is submerged in the liquid. Bring to a simmer, then cover with a lid.
  7. Transfer the pot to the oven and cook for 3-4 hours, or until the meat is tender and easily shreds with a fork. Check occasionally and add more broth if needed.
  8. Once done, remove the roast from the pot and let it rest for a few minutes. Slice or shred the meat and serve with the rich sauce and vegetables. Garnish with fresh parsley.
