Learn how to make delicious Lemon Garlic Butter Shrimp Scampi. Easy recipe with step-by-step instructions.
Total Time:45 minutes
Yield:4 servings
Ingredients
1 pound large shrimp, peeled and deveined
2 tablespoons unsalted butter
3 cloves garlic, minced
1/4 teaspoon red pepper flakes (optional, for a bit of heat)
1/4 cup chicken broth or white wine
Juice of 1 lemon
1/4 cup chopped fresh parsley
Salt and pepper to taste
1 tablespoon olive oil
Pasta of choice (spaghetti or linguine works well)
Freshly grated Parmesan cheese for serving
Instructions
Begin by cooking your pasta according to the package instructions. Drain and set aside, reserving a cup of the pasta water.
In a large skillet over medium heat, melt the butter and olive oil together. Add the minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant.
Add the shrimp to the skillet, seasoning with salt and pepper. Cook for about 2-3 minutes on each side, or until the shrimp are pink and opaque.
Pour in the chicken broth or white wine, allowing it to simmer for another 2 minutes. This will deglaze the pan and create a lovely sauce.
Stir in the lemon juice and parsley, tossing everything together to ensure the shrimp are well-coated.
Add the cooked pasta to the skillet, tossing to combine. If the sauce is too thick, add a bit of the reserved pasta water to reach your desired consistency.
Serve immediately, garnished with freshly grated Parmesan cheese and a sprinkle of parsley for extra flavor.
