Ingredients

  • 4 fillets of sea bass (about 6 ounces each)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • Juice and zest of 1 lemon

  • 2 tablespoons unsalted butter
  • 1 pound fresh spinach
  • 1/2 cup heavy cream
  • 1/4 teaspoon nutmeg
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 400°F (200°C). This is a great time to get the kitchen buzzing with excitement, just like when my siblings and I would crowd around the oven waiting for abuela’s creations.
  2. Season the sea bass fillets with salt and pepper. In a small bowl, mix together the minced garlic, lemon juice, and zest. Set aside.

  4. Flip the fillets, then spoon the garlic-lemon mixture over them. Transfer the skillet to the oven and bake for 10-12 minutes, or until the fish flakes easily with a fork.
  5. While the sea bass is in the oven, melt the butter in a large pan over medium heat. Add the spinach and cook until wilted, about 3 minutes.
  6. Reduce the heat to low, then stir in the heavy cream and nutmeg. Cook for another 2 minutes before adding the Parmesan cheese, stirring until melted and well combined.
  7. Once the sea bass is cooked, serve it over a bed of creamed spinach, ensuring each bite delivers a blend of tangy, garlicky sea bass with creamy, cheesy spinach.
