Ingredients
12 ounces of your favorite pasta (spaghetti or fettuccine work wonderfully)
1 cup ricotta cheese
Zest and juice of 2 lemons
3 tablespoons extra virgin olive oil
2 cloves garlic, minced
1/4 cup freshly grated Parmesan cheese
Salt and freshly ground black pepper, to taste
A handful of fresh basil or parsley, chopped (optional for garnish)
Instructions
Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
In a large mixing bowl, combine the ricotta cheese, lemon zest, lemon juice, and 2 tablespoons of olive oil. Stir until smooth and set aside.
In a large skillet over medium heat, add the remaining tablespoon of olive oil. Sauté the minced garlic until fragrant, about 1 minute, being careful not to burn it.
Add the cooked pasta to the skillet along with the ricotta mixture. Toss gently to combine, adding reserved pasta water a little at a time until the sauce reaches your desired consistency.
Stir in the grated Parmesan cheese, and season with salt and freshly ground black pepper to taste.
Serve immediately, garnished with fresh basil or parsley, if desired.
