Ingredients

  • 4 large potatoes, peeled and cubed
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked and crumbled bacon
  • 1/4 cup ranch dressing
  • 2 green onions, finely chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 1/2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 2 large eggs
  • 1 1/2 cups milk
  • 1/4 cup melted butter

Instructions

  1. Boil the potatoes in a large pot of salted water until tender, about 15 minutes. Drain and mash them in a bowl.
  2. Mix in the cheddar cheese, bacon, ranch dressing, green onions, garlic powder, onion powder, salt, and pepper. Set aside.
  3. In another bowl, combine the flour and baking powder. In a separate bowl, whisk together the eggs, milk, and melted butter.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  5. Preheat your waffle iron. Scoop a small amount of the potato mixture and form it into a ball, about the size of a golf ball.
  6. Place the potato ball in the center of the waffle iron and gently press down. Cook until the waffle is golden brown and crispy, about 5-7 minutes.
  7. Repeat with the remaining mixture, keeping the finished waffle bombs warm in a low oven if desired.
