- Preheat your oven to 400°F (200°C). Grease a 9×13-inch baking dish lightly with olive oil.
- In a large bowl, combine the diced potatoes, olive oil, garlic powder, onion powder, paprika, salt, and pepper. Toss until the potatoes are evenly coated.
- Spread the seasoned potatoes in the prepared baking dish and bake for 25 minutes, stirring halfway through.
- While the potatoes are baking, season the chicken pieces with a pinch of salt and pepper. Heat a skillet over medium-high heat and cook the chicken until browned and cooked through, about 8-10 minutes.
- Once the potatoes are done, remove the dish from the oven and lower the oven temperature to 350°F (175°C).
