2 cups all-purpose flour
1 cup yellow cornmeal
1 tablespoon baking powder
1 teaspoon salt
1/2 teaspoon baking soda
1/4 cup sugar
1/2 cup unsalted butter, cold and cubed
1 cup buttermilk
1 cup shredded sharp cheddar cheese
1 pound shrimp, peeled and deveined
2 tablespoons olive oil
1 teaspoon garlic powder
1/2 teaspoon smoked paprika
1/4 teaspoon cayenne pepper (optional, for a kick)
1/4 cup chopped fresh chives
Instructions
Preheat your oven to 400°F and line a baking sheet with parchment paper.
In a large mixing bowl, combine flour, cornmeal, baking powder, salt, baking soda, and sugar.
Add the cold butter cubes to the dry ingredients and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.
Pour in the buttermilk and fold gently until the dough just comes together. Be careful not to overmix.
In a skillet, heat olive oil over medium heat. Add shrimp, garlic powder, smoked paprika, and cayenne pepper. Cook until shrimp are pink and opaque, about 3-4 minutes. Set aside to cool slightly.
Roll out the dough on a lightly floured surface to about 1/2 inch thick. Cut into rounds using a biscuit cutter.
Place a spoonful of the shrimp mixture and a sprinkle of cheddar cheese onto each round, then fold the dough over to form a ball. Pinch the edges to seal.
Arrange the biscuit bombs on the prepared baking sheet and bake for 15-18 minutes, or until golden brown.
