12 ounces elbow macaroni
2 cups shredded sharp cheddar cheese
1 cup shredded mozzarella cheese
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
2 cups whole milk
1 teaspoon Dijon mustard
1/2 teaspoon garlic powder
Salt and pepper to taste
1/4 cup grated Parmesan cheese for topping
Optional: 1/4 teaspoon cayenne pepper for a hint of spice
Instructions
Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.
In a medium saucepan, melt the butter over medium heat. Stir in the flour to create a roux, cooking for about 1-2 minutes until golden and bubbling.
Gradually whisk in the milk, ensuring there are no lumps. Continue to cook, stirring constantly, until the mixture thickens enough to coat the back of a spoon, about 5-7 minutes.
Reduce the heat to low and add the shredded cheddar and mozzarella cheeses, stirring until melted and smooth. Mix in the Dijon mustard, garlic powder, salt, pepper, and cayenne pepper if using.
Combine the cooked macaroni with the cheese sauce, stirring to coat the pasta evenly.
Transfer to a baking dish, sprinkle with grated Parmesan cheese, and bake in a preheated oven at 350°F (175°C) for 20 minutes, or until the top is golden and bubbly.
