Ingredients
Gather these ingredients, and you’ll be on your way to creating a dish that’s as flavorful as it is comforting:
- 12 ounces egg noodles
- 2 tablespoons olive oil
- 1 pound Italian sausage, casings removed
- 1 large onion, sliced
- 2 bell peppers (red and green), sliced
- 4 cloves garlic, minced
- 1/2 cup red wine (Chianti or Merlot work well)
- 1 can (14 ounces) diced tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (optional)
Instructions
Follow these steps to bring a taste of Italy to your table:
- Bring a large pot of salted water to a boil and cook the egg noodles according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the Italian sausage, breaking it up with a spoon, and cook until browned, about 5-7 minutes. Remove the sausage from the skillet and set aside.
- In the same skillet, add the sliced onion and bell peppers. Sauté until the vegetables are softened, about 5 minutes.
- Add the minced garlic and cook for an additional minute until fragrant.
- Pour in the red wine and let it simmer for 2-3 minutes, allowing the alcohol to cook off and the flavors to meld.
- Add the diced tomatoes, oregano, basil, salt, and pepper. Stir to combine and let the sauce simmer for 10 minutes.
- Return the sausage to the skillet and mix well. Add the cooked noodles, tossing everything together until the noodles are well coated with the sauce.
- Serve hot, garnished with fresh parsley and grated Parmesan cheese, if desired.
