Ingredients

  • 2 cups fresh spinach, chopped
  • 1 cup crumbled feta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 package of phyllo dough (about 20 sheets)
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the chopped spinach, feta cheese, Parmesan cheese, olive oil, lemon juice, oregano, black pepper, and salt. Stir until well combined.
  3. Lay one sheet of phyllo dough on a clean surface and brush lightly with olive oil. Place another sheet on top and brush again. Repeat this process until you have a stack of 5 sheets.
  4. Spoon a small amount of the spinach mixture onto the edge of the phyllo dough. Roll the dough over the filling, tucking in the sides as you go, to form a tight cylinder.
  5. Brush the top with a bit of the beaten egg to give it a golden finish once baked.
  6. Repeat with the remaining phyllo sheets and filling until all the mixture is used up.
  7. Place the rolls on the prepared baking sheet and bake for 20-25 minutes or until golden brown and crispy.
  8. Remove from the oven and let cool slightly before serving.
