Ingredients

  • 8 slices of sourdough bread
  • 2 tablespoons olive oil
  • 1 garlic clove, minced
  • 2 cups fresh spinach leaves
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional, for a spicy kick)
  • 1 cup crumbled feta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup sun-dried tomatoes, chopped
  • 1/4 cup kalamata olives, sliced
  • Salt and pepper to taste

If you’re out of sourdough, any crusty bread will work beautifully. And for those who aren’t big fans of feta, goat cheese is a lovely substitute.

Instructions

  1. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the minced garlic and cook until fragrant, about 1 minute.
  2. Add the fresh spinach, oregano, and red pepper flakes. Sauté until the spinach is wilted, about 3 minutes. Season with salt and pepper to taste, and set aside.
  3. In a medium bowl, mix together the crumbled feta, shredded mozzarella, chopped sun-dried tomatoes, and sliced kalamata olives.
  4. Lay out the slices of sourdough bread. Evenly distribute the spinach mixture and cheese mixture onto four slices of bread, then top with the remaining slices to form sandwiches.
  5. Brush the outside of each sandwich with the remaining olive oil.
  6. Heat a large skillet or griddle over medium heat. Place the sandwiches on the skillet, pressing down gently with a spatula. Cook until the bread is golden brown and the cheese is melted, about 3-4 minutes per side.
  7. Remove from heat, let cool slightly, and cut each sandwich in half. Serve warm and enjoy!
