Ingredients
- 8 slices of sourdough bread
- 2 tablespoons olive oil
- 1 garlic clove, minced
- 2 cups fresh spinach leaves
- 1/2 teaspoon dried oregano
- 1/4 teaspoon red pepper flakes (optional, for a spicy kick)
- 1 cup crumbled feta cheese
- 1 cup shredded mozzarella cheese
- 1/4 cup sun-dried tomatoes, chopped
- 1/4 cup kalamata olives, sliced
- Salt and pepper to taste
If you’re out of sourdough, any crusty bread will work beautifully. And for those who aren’t big fans of feta, goat cheese is a lovely substitute.
Instructions
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the minced garlic and cook until fragrant, about 1 minute.
- Add the fresh spinach, oregano, and red pepper flakes. Sauté until the spinach is wilted, about 3 minutes. Season with salt and pepper to taste, and set aside.
- In a medium bowl, mix together the crumbled feta, shredded mozzarella, chopped sun-dried tomatoes, and sliced kalamata olives.
- Lay out the slices of sourdough bread. Evenly distribute the spinach mixture and cheese mixture onto four slices of bread, then top with the remaining slices to form sandwiches.
- Brush the outside of each sandwich with the remaining olive oil.
- Heat a large skillet or griddle over medium heat. Place the sandwiches on the skillet, pressing down gently with a spatula. Cook until the bread is golden brown and the cheese is melted, about 3-4 minutes per side.
- Remove from heat, let cool slightly, and cut each sandwich in half. Serve warm and enjoy!
