Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup mayonnaise (or Greek yogurt for a lighter version)
- 1/2 cup freshly grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon dried oregano
- 1/2 teaspoon paprika
- Salt and pepper, to taste
- Chopped fresh parsley, for garnish
Substitution tip: If you’re out of Parmesan, Pecorino Romano or Asiago could work well too, adding their own unique twist to the dish.
Instructions
- Preheat your oven to 375°F (190°C). Line a baking dish with parchment paper or lightly grease with cooking spray.
- In a medium-sized bowl, mix together the mayonnaise, Parmesan cheese, garlic powder, onion powder, oregano, and paprika until well combined.
- Season the chicken breasts with salt and pepper, then place them in the prepared baking dish.
- Spread the mayonnaise mixture evenly over the top of each chicken breast, ensuring they are fully covered.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the top is golden brown. Use a meat thermometer to ensure the chicken reaches an internal temperature of 165°F (75°C).
- Once cooked, remove from the oven and let it rest for a couple of minutes before serving. Garnish with chopped fresh parsley for a pop of color and freshness.
Pro tip from my kitchen to yours: If you’re looking for a bit more crunch, you can sprinkle some breadcrumbs on top before baking. It adds a delightful texture contrast to the creamy topping.
