Learn how to make delicious Mini Cheesecake Jars with Berry Compote. Easy recipe with step-by-step instructions.
Total Time:45 minutes
Yield:4 servings
Ingredients
1 cup graham cracker crumbs
2 tablespoons unsalted butter, melted
8 ounces cream cheese, softened
1/4 cup granulated sugar
1 teaspoon vanilla extract
1 cup heavy whipping cream
1 cup mixed berries (such as strawberries, blueberries, and raspberries)
2 tablespoons honey (substitute with maple syrup for a different flavor)
1 tablespoon lemon juice
Instructions
Start by preparing the berry compote. In a small saucepan over medium heat, combine the mixed berries, honey, and lemon juice. Cook until the berries have softened and the mixture thickens slightly, about 10 minutes. Set aside to cool.
In a bowl, mix the graham cracker crumbs with melted butter until well combined. Divide the mixture evenly among 6 small jars or glasses, pressing down to form a crust.
In a large mixing bowl, beat the softened cream cheese with the granulated sugar and vanilla extract until smooth and creamy.
In a separate bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
Spoon the cheesecake filling over the graham cracker crust in each jar, smoothing the top with the back of a spoon.
Top each cheesecake jar with a generous spoonful of the berry compote.
Refrigerate the jars for at least 2 hours before serving, allowing the flavors to meld together beautifully.
