Ingredients
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 tablespoons olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 cup uncooked orzo pasta
- 2 cups chicken broth
- 1 cup canned diced tomatoes, drained
- 1 cup shredded Monterey Jack cheese
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Fresh cilantro or parsley, for garnish
If you’re like me and enjoy a bit of flexibility in your cooking, feel free to swap out the chicken for turkey or even tofu for a vegetarian twist. The Monterey Jack cheese can also be substituted with cheddar or a Mexican cheese blend, depending on your preference.
Instructions
- Heat the olive oil in a large skillet over medium-high heat. Add the chicken pieces, season with salt, pepper, and smoked paprika, and cook until browned on all sides, about 5-7 minutes. Remove chicken and set aside.
- In the same pan, add the diced onion and garlic. Sauté until the onion becomes translucent, approximately 3 minutes, stirring occasionally to prevent burning.
- Add the uncooked orzo to the pan, and toast for about 2 minutes, stirring frequently. This step adds a lovely nutty flavor to the orzo, reminiscent of my abuela’s method of building flavor in simple dishes.
- Pour in the chicken broth and diced tomatoes, stirring to combine. Return the chicken to the pan, ensuring it’s evenly distributed among the orzo.
- Bring the mixture to a gentle simmer, cover, and reduce the heat to low. Cook for 15-20 minutes, or until the orzo is tender and has absorbed most of the liquid.
- Remove the pan from heat and sprinkle the shredded Monterey Jack cheese over the top. Cover again and let it sit for a few minutes to allow the cheese to melt and become gooey and delightful.
- Garnish with fresh cilantro or parsley before serving for a burst of color and freshness.
