Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 cup fresh basil leaves, chopped
  • 1 teaspoon Italian seasoning
  • 1 tablespoon lemon juice

Feel free to substitute heavy cream with half-and-half for a lighter version, or swap fresh basil for dried if that’s what you have on hand. Cooking is all about making the recipe your own!

Instructions

  1. Begin by seasoning the chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat.
  2. Add the chicken breasts to the skillet and cook for 6-7 minutes per side, or until golden brown and cooked through. Remove and set aside.
  3. In the same skillet, melt butter and add minced garlic. Sauté for about 30 seconds, or until fragrant.
  4. Pour in the chicken broth and bring to a simmer. Stir in the heavy cream and parmesan cheese, whisking until smooth and thickened, about 3-4 minutes.
  5. Add the Italian seasoning, lemon juice, and most of the basil, reserving some for garnish. Stir to combine.
  6. Return the chicken breasts to the skillet, spooning the cream sauce over them. Sprinkle mozzarella cheese on top.
  7. Cover the skillet and let simmer on low heat until the mozzarella is melted and bubbly, about 5 minutes.
