Ingredients
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 cup chicken broth
- 1 cup heavy cream
- 1 cup shredded mozzarella cheese
- 1/2 cup grated parmesan cheese
- 2 tablespoons unsalted butter
- 3 cloves garlic, minced
- 1 cup fresh basil leaves, chopped
- 1 teaspoon Italian seasoning
- 1 tablespoon lemon juice
Feel free to substitute heavy cream with half-and-half for a lighter version, or swap fresh basil for dried if that’s what you have on hand. Cooking is all about making the recipe your own!
Instructions
- Begin by seasoning the chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat.
- Add the chicken breasts to the skillet and cook for 6-7 minutes per side, or until golden brown and cooked through. Remove and set aside.
- In the same skillet, melt butter and add minced garlic. Sauté for about 30 seconds, or until fragrant.
- Pour in the chicken broth and bring to a simmer. Stir in the heavy cream and parmesan cheese, whisking until smooth and thickened, about 3-4 minutes.
- Add the Italian seasoning, lemon juice, and most of the basil, reserving some for garnish. Stir to combine.
- Return the chicken breasts to the skillet, spooning the cream sauce over them. Sprinkle mozzarella cheese on top.
- Cover the skillet and let simmer on low heat until the mozzarella is melted and bubbly, about 5 minutes.
