Ingredients
- 12 lasagna noodles
- 2 tablespoons olive oil
- 1 pound mushrooms, finely chopped
- 3 cloves garlic, minced
- 5 cups fresh spinach, roughly chopped
- 1 1/2 cups ricotta cheese
- 1/2 cup grated Parmesan cheese
- 2 cups marinara sauce
- 1 1/2 cups shredded mozzarella cheese
- Salt and pepper to taste
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
Feel free to substitute with any type of mushrooms you enjoy or have on hand, and for a lactose-free version, use dairy-free cheeses. This flexibility is something I love, reminiscent of my grandmother’s way of cooking with whatever was fresh and available.
Instructions
- Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking dish with a bit of olive oil or cooking spray.
- Cook the lasagna noodles according to package instructions until al dente. Drain and lay them flat on a clean kitchen towel to prevent sticking.
- In a large skillet, heat the olive oil over medium heat. Add the chopped mushrooms and cook until they release their moisture and start to brown, about 8-10 minutes.
- Add the minced garlic and cook for another minute until fragrant. Stir in the spinach and cook until wilted, about 2-3 minutes. Season with salt, pepper, basil, and oregano. Remove from heat and let cool slightly.
- In a medium bowl, combine the ricotta cheese and Parmesan cheese. Fold in the mushroom and spinach mixture until well combined.
- Spread 1 cup of marinara sauce evenly over the bottom of the prepared baking dish.
- On each lasagna noodle, spread a generous layer of the ricotta mixture. Roll each noodle carefully and place seam-side down in the baking dish.
- Top the rolls with the remaining marinara sauce and sprinkle with mozzarella cheese.
- Cover the dish with aluminum foil and bake for 20 minutes. Then, remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
- Allow the lasagna rolls to cool for a few minutes before serving. Enjoy the delightful aroma and flavors that bring a taste of home to your table.
