Ingredients

  • 12 lasagna noodles
  • 2 tablespoons olive oil
  • 1 pound mushrooms, finely chopped
  • 3 cloves garlic, minced
  • 5 cups fresh spinach, roughly chopped
  • 1 1/2 cups ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cups marinara sauce
  • 1 1/2 cups shredded mozzarella cheese
  • Salt and pepper to taste
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano

Feel free to substitute with any type of mushrooms you enjoy or have on hand, and for a lactose-free version, use dairy-free cheeses. This flexibility is something I love, reminiscent of my grandmother’s way of cooking with whatever was fresh and available.

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking dish with a bit of olive oil or cooking spray.
  2. Cook the lasagna noodles according to package instructions until al dente. Drain and lay them flat on a clean kitchen towel to prevent sticking.
  3. In a large skillet, heat the olive oil over medium heat. Add the chopped mushrooms and cook until they release their moisture and start to brown, about 8-10 minutes.
  4. Add the minced garlic and cook for another minute until fragrant. Stir in the spinach and cook until wilted, about 2-3 minutes. Season with salt, pepper, basil, and oregano. Remove from heat and let cool slightly.
  5. In a medium bowl, combine the ricotta cheese and Parmesan cheese. Fold in the mushroom and spinach mixture until well combined.
  6. Spread 1 cup of marinara sauce evenly over the bottom of the prepared baking dish.
  7. On each lasagna noodle, spread a generous layer of the ricotta mixture. Roll each noodle carefully and place seam-side down in the baking dish.
  8. Top the rolls with the remaining marinara sauce and sprinkle with mozzarella cheese.
  9. Cover the dish with aluminum foil and bake for 20 minutes. Then, remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
  10. Allow the lasagna rolls to cool for a few minutes before serving. Enjoy the delightful aroma and flavors that bring a taste of home to your table.
