Ingredients
4 boneless, skinless chicken breasts
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon dried Italian seasoning
1 cup heavy cream
1/2 cup chicken broth
1/2 cup grated Parmesan cheese
1 cup sun-dried tomatoes, drained and chopped
2 cups fresh spinach leaves
3 cloves garlic, minced
1 tablespoon butter
Fresh basil leaves for garnish (optional)
Instructions
Season the chicken breasts with salt, pepper, garlic powder, and Italian seasoning on both sides.
In a large skillet, heat olive oil over medium-high heat. Add the chicken breasts and cook for 5-7 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.
In the same skillet, add butter and minced garlic. Sauté until fragrant, about 1 minute.
Pour in the chicken broth and use a wooden spoon to scrape up any browned bits from the bottom of the pan. This adds incredible flavor!
Reduce heat to medium and stir in the heavy cream and Parmesan cheese until the cheese has melted and the sauce is smooth.
Add the sun-dried tomatoes and spinach to the skillet. Cook until the spinach is wilted, about 2-3 minutes.
Return the chicken to the skillet, spooning the sauce over the top. Let it simmer for a few minutes to allow the flavors to meld together.
Garnish with fresh basil leaves if desired, and serve hot.
