Ingredients

  • 1 cup jasmine rice

  • 1 red bell pepper, diced
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 lime, zested and juiced
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

If you’re out of jasmine rice, basmati makes a wonderful substitute. And if you prefer a milder heat, you can adjust the jerk seasoning to your taste. Remember, cooking is all about making it your own!

Instructions

Let’s get cooking! Follow these steps to create your own culinary masterpiece:

  1. Start by seasoning the chicken thighs with jerk seasoning, ensuring they are well coated. Let them marinate for at least 15 minutes for maximum flavor.
  2. Heat the olive oil in a large, deep pan over medium heat. Add the chicken thighs and cook for about 5 minutes on each side until they are browned and cooked through. Remove the chicken from the pan and set aside.
  3. In the same pan, add the onion, garlic, red bell pepper, and ginger. Sauté for 3-4 minutes until the vegetables are tender and fragrant.
  4. Add the jasmine rice, stirring it into the vegetables for about a minute to toast slightly.
  5. Pour in the coconut milk and 1 cup of water, stirring to combine. Bring to a gentle simmer.
  6. Return the chicken to the pan, along with the pineapple chunks. Cover and let everything cook for about 20 minutes, or until the rice is tender and has absorbed most of the liquid.
  7. Finish with lime zest and juice, salt, and pepper to taste. Give everything a final stir and garnish with fresh cilantro before serving.
