Ingredients

  • 8 slices of bacon, chopped
  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 1 can (14 oz) diced tomatoes, undrained
  • 1/2 cup heavy cream
  • 1 package (20 oz) cheese tortellini
  • 2 cups shredded cheddar cheese
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Feel free to substitute ground turkey for the beef if you prefer a lighter option, and if you’re out of cheddar, mozzarella or Monterey Jack work beautifully too!

Instructions

  1. In a large pot or Dutch oven, cook the chopped bacon over medium heat until crispy. Remove the bacon and set aside, leaving the drippings in the pot.
  2. Add the ground beef to the pot and cook until browned, breaking it up with a spoon, about 5-7 minutes. Drain excess fat if needed.
  3. Add the diced onion and minced garlic to the beef, cooking until the onion is soft, about 3 minutes.
  4. Stir in the beef broth and diced tomatoes, bringing the mixture to a simmer.
  5. Add the heavy cream and tortellini, stirring to combine. Cover and cook for about 10 minutes, or until the tortellini are tender.
  6. Stir in the cheddar cheese and cooked bacon, mixing until the cheese is melted and everything is well combined. Season with salt and pepper to taste.
