Ingredients
- 8 slices of bacon, chopped
- 1 pound ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 cups beef broth
- 1 can (14 oz) diced tomatoes, undrained
- 1/2 cup heavy cream
- 1 package (20 oz) cheese tortellini
- 2 cups shredded cheddar cheese
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Feel free to substitute ground turkey for the beef if you prefer a lighter option, and if you’re out of cheddar, mozzarella or Monterey Jack work beautifully too!
Instructions
- In a large pot or Dutch oven, cook the chopped bacon over medium heat until crispy. Remove the bacon and set aside, leaving the drippings in the pot.
- Add the ground beef to the pot and cook until browned, breaking it up with a spoon, about 5-7 minutes. Drain excess fat if needed.
- Add the diced onion and minced garlic to the beef, cooking until the onion is soft, about 3 minutes.
- Stir in the beef broth and diced tomatoes, bringing the mixture to a simmer.
- Add the heavy cream and tortellini, stirring to combine. Cover and cook for about 10 minutes, or until the tortellini are tender.
- Stir in the cheddar cheese and cooked bacon, mixing until the cheese is melted and everything is well combined. Season with salt and pepper to taste.
- Garnish with fresh parsley before serving. Enjoy the smiles around the table!
