Total Time:45 minutes
Yield:4 servings
Ingredients
2 tablespoons olive oil
1 pound chicken breast, cut into bite-sized pieces
2 tablespoons Cajun seasoning (store-bought or homemade)
1 red bell pepper, sliced
1 yellow bell pepper, sliced
3 cloves garlic, minced
2 cups chicken broth
1 cup heavy cream
8 ounces penne pasta
1 cup Parmesan cheese, grated
Salt and pepper to taste
Chopped parsley for garnish
Instructions
Heat the olive oil in a large pot over medium-high heat. Add the chicken pieces and sprinkle with Cajun seasoning. Cook until the chicken is browned on all sides, about 5-7 minutes.
Add the sliced bell peppers and minced garlic to the pot. Sauté for another 3-4 minutes until the peppers are slightly tender.
Pour in the chicken broth and heavy cream, stirring to combine. Bring the mixture to a simmer.
Add the penne pasta to the pot, ensuring it’s submerged in the liquid. Cover and cook for about 12-15 minutes, stirring occasionally, until the pasta is al dente.
Reduce the heat to low and stir in the Parmesan cheese until the sauce is creamy and thickened. Season with salt and pepper to taste.
Garnish with chopped parsley before serving, and enjoy the rich, spicy, and creamy goodness!
