Ingredients
- 12 ounces of your favorite pasta (penne, fusilli, or spaghetti work well)
- 2 tablespoons olive oil
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 teaspoon red pepper flakes (optional, for a bit of heat)
- 1 can (14 ounces) crushed tomatoes
- 3 cups vegetable or chicken broth
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 1/2 cup grated Parmesan cheese
- Fresh basil leaves for garnish
Feel free to get creative with substitutions. Swap the Parmesan for pecorino if you’re feeling adventurous, or add in some sliced mushrooms or bell peppers for extra texture and flavor.
Instructions
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the garlic and red pepper flakes, cooking for an additional minute until fragrant.
- Add the crushed tomatoes, broth, oregano, basil, salt, and pepper to the pot, stirring to combine.
- Bring the mixture to a gentle boil, then add the pasta. Stir well to ensure the pasta is submerged in the liquid.
- Reduce the heat to a simmer and cover the pot. Cook for 10-12 minutes, stirring occasionally, until the pasta is al dente and the sauce has thickened. This is a great time to sip a glass of wine or catch up with your loved ones, just as I used to chat with my siblings around the kitchen table.
- Once the pasta is cooked, remove the pot from the heat. Stir in the Parmesan cheese, allowing it to melt into the sauce and add a creamy texture.
- Serve the pasta hot, garnished with fresh basil leaves. Enjoy the delicious aroma that fills your kitchen, and don’t forget to share this moment with someone special.
