- 2 pounds of bone-in beef short ribs

- 28-ounce can of crushed tomatoes

Instructions
Let’s get cooking! Follow these steps to create your own flavorful masterpiece:
- Heat the olive oil in a large Dutch oven over medium-high heat. Season the short ribs with salt and pepper, then brown on all sides, about 8 minutes total. Remove from the pot and set aside.
- In the same pot, add the onions, garlic, carrots, and celery. Sauté until the vegetables are soft, about 5 minutes, scraping up any brown bits from the bottom of the pot.
- Stir in the tomato paste, cooking for another 2 minutes until it deepens in color.
- Deglaze the pot with red wine, allowing the alcohol to evaporate as it reduces by half, about 5 minutes.
- Return the short ribs to the pot. Add the crushed tomatoes, oregano, thyme, bay leaf, and a sprinkle of salt and pepper.
- Bring the mixture to a simmer, then reduce the heat to low. Cover and cook for 2.5 to 3 hours, or until the short ribs are tender and easily fall off the bone.
- Remove the short ribs, shred the meat, and discard the bones. Return the meat to the pot, stirring to combine and allowing it to simmer uncovered for an additional 10 minutes to thicken the sauce.
- Serve over your favorite pasta or polenta, garnished with fresh herbs and Parmesan cheese.
