Ingredients
1 tablespoon olive oil
1 pound smoked sausage, sliced
1 onion, chopped
3 cloves garlic, minced
2 cups chicken broth
1 cup heavy cream
1 can (14.5 oz) diced tomatoes, undrained
8 ounces pasta (penne or fusilli work well)
1 teaspoon paprika
Salt and pepper to taste
1 cup shredded cheddar cheese
Fresh parsley, chopped (optional for garnish)
Instructions
In a large pot or Dutch oven, heat the olive oil over medium heat.
Add the sliced smoked sausage and cook until browned, about 5 minutes. Remove and set aside.
In the same pot, add the chopped onion and cook until translucent, about 3-4 minutes. Stir in the minced garlic and cook for another minute.
Pour in the chicken broth, heavy cream, and diced tomatoes. Stir to combine.
Add the pasta, paprika, salt, and pepper. Stir well and bring to a gentle boil.
Reduce the heat to a simmer, cover, and cook for 12-15 minutes until the pasta is al dente and most of the liquid is absorbed. Remember to stir occasionally to prevent sticking.
Return the sausage to the pot, stirring to integrate. Add the cheddar cheese and mix until melted and smooth.
Garnish with fresh parsley if desired, and serve hot.
