Total Time:45 minutes
Yield:4 servings
Ingredients
1 tablespoon olive oil
1 pound ground beef
1 large onion, chopped
2 cloves garlic, minced
1 cup long-grain white rice
2 cups beef broth
1 cup canned diced tomatoes
2 tablespoons tomato paste
1 tablespoon smoked paprika
1 teaspoon chili powder
1 tablespoon honey
Salt and pepper to taste
1/4 cup chopped fresh cilantro (optional, for garnish)
Instructions
Heat the olive oil in a large skillet over medium heat. Add the ground beef and cook until browned, breaking it apart with a spatula, about 5-7 minutes.
Add the chopped onion and minced garlic to the skillet and sauté until the onion becomes translucent, about 3-4 minutes.
Stir in the rice, beef broth, diced tomatoes, and tomato paste. Mix well to combine all the ingredients.
Sprinkle in the smoked paprika, chili powder, salt, and pepper. Stir to ensure the spices are evenly distributed.
Bring the mixture to a gentle boil, then reduce the heat to low. Cover the skillet and let it simmer until the rice is tender, about 20-25 minutes. Stir occasionally to prevent sticking.
Drizzle the honey over the cooked rice mixture, giving it a final stir. Taste and adjust seasoning if needed.
Remove from heat and let it sit, covered, for another 5 minutes to allow the flavors to meld.
Garnish with chopped cilantro if desired and serve warm.
