1 1/2 pounds chicken thighs, bone-in, skin-on
1/2 cup creamy peanut butter
2 tablespoons soy sauce
1 tablespoon honey
1 tablespoon lime juice
2 cloves garlic, minced
1 teaspoon fresh ginger, grated
1/4 teaspoon red pepper flakes (optional, for heat)
Salt and pepper to taste
2 tablespoons olive oil
Chopped cilantro for garnish
Chopped peanuts for garnish
Instructions
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper for easy cleanup.
In a medium bowl, combine the peanut butter, soy sauce, honey, lime juice, garlic, ginger, and red pepper flakes. Stir until well mixed.
Season the chicken thighs with salt and pepper. Heat the olive oil in a large skillet over medium-high heat. Sear the chicken thighs skin-side down until golden brown, about 3-4 minutes. Flip and sear the other side for another 3 minutes.
