Ingredients

  • 1 cup graham cracker crumbs

  • 8 oz cream cheese, softened

  • 2 cups whipped topping, divided
  • 1 cup pecan halves
  • 1 cup brown sugar
  • 1/2 cup light corn syrup
  • 1/4 cup unsalted butter
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Pro tip: If you’re out of graham crackers, you can substitute with shortbread cookies for an equally delicious crust. And for a lighter version, consider using light cream cheese and whipped topping.

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish and set aside.
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Press the mixture evenly into the bottom of the prepared baking dish to form the crust. Bake for 10 minutes, then let it cool.
  3. In a separate bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth. Fold in 1 cup of whipped topping and spread this mixture over the cooled crust.
  4. In a saucepan over medium heat, combine the brown sugar, corn syrup, butter, eggs, vanilla extract, and salt. Stir continuously until the mixture thickens, about 8-10 minutes. Remove from heat and stir in the pecan halves.
  5. Pour the pecan mixture over the cream cheese layer, spreading it evenly. Refrigerate for at least 2 hours to set.
  6. Before serving, spread the remaining whipped topping over the pecan layer. Optional: Garnish with extra pecan halves for a decorative touch.
