Ingredients

  • 4 boneless, skinless chicken thighs
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • For the Green Sauce:
  • 1 cup fresh cilantro leaves
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tablespoons lime juice
  • 1 clove garlic
  • 1 jalapeño, seeded
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a small bowl, mix together the cumin, smoked paprika, garlic powder, salt, and black pepper.
  3. Rub the olive oil over the chicken thighs, then coat them with the spice mixture, ensuring they are evenly covered.
  4. Place the chicken thighs on the prepared baking sheet and bake for 25-30 minutes, or until the internal temperature reaches 165°F (74°C).
  5. While the chicken is baking, prepare the green sauce. In a blender, combine the cilantro, mayonnaise, sour cream, lime juice, garlic, jalapeño, and salt. Blend until smooth and creamy.
  6. Once the chicken is done, let it rest for 5 minutes before serving. Drizzle the creamy green sauce over the top or serve it on the side for dipping.
